Delicious, simple egg casserole recipe
I love simple recipes. If the cleanup is simple as well, I love it even more! If you love these things too, you will most definitely love this simple egg casserole recipe. I like to prepare this on the weekend or at the beginning of the week so that my husband and I have an easy meal to take to work for breakfast or even lunch. It’s absolutely delicious and has become a staple in our home.
Another great thing about this recipe is that it can be customized in so many different ways. I have made it without hashbrowns for a low carb option. You can make it dairy free by omitting the cheese and using dairy free milk instead of half and half. You can use any kind of ground meat you want such as sausage, turkey, or even ground beef. You can even add additional vegetables such as peppers to add even more flavor!

Egg Casserole
Ingredients
- 1 lb hot or mild sausage
- 1 onion
- 12 eggs
- ¼ cup half & half or milk
- 1 package shredded hash browns
Instructions
- Preheat oven to 350 F
- Grease 9×12 baking dish
- Brown sausage and onion in skillet (drain if desired)
- Drain hashbrowns and pat dry
- Place hashbrowns in bottom of baking dish
- Add sausage and onion
- Mix eggs and half & half until completely incorporated
- Add egg mixture to baking dish
- Bake uncovered at 350 F for 30 minutes or until cooked through
- You can also add shredded cheese of choice for the last few minutes of baking just until melted
